Aigle Royal, Pinot Noir
The Domaine de l'Aigle is a 47‐hectare estate magnificently located in the northernmost part of the Haute Vallée de l'Aude winemaking region, ranging between 250 and 500 meters above sea level. Here we grow Chardonnay and Pinot Noir grapes of great elegance and finesse. L’Aigle Royal is a wine produced from the fruit of a plot of Pinot Noir vines in the highest reaches of the estate, rooted in clay‐limestone soil and facing directly south.
The vines of Aigle Royal received particular care and frequent manual interventions, according to practices preserving the environment: pruning, destemming, thinning, thinning out, grape harvest vintage. The vineyard is established on espalier to produce an optimal illuminated leaf area for grapes maturing. The vine stocks are planted with a relatively high density of 5.000 stocks / Ha, which enables to control and obtain high quality wines, at low yield. Close monitoring of the ripening process (with tasting and analysis of the grapes) helps to determine the ideal harvesting date, when the fruit achieves the perfect balance between aromatic intensity and the maturity of the polyphenols. The grapes are harvested manually, de‐stemmed and gravity‐fed into the vats. The fermentation and maceration process lasts for around twenty days in large open vats with cap punching twice daily. This is followed by malolactic fermentation before the wine is left to mature in oak barrels for a year.
Ruby red colour with slight purplish tints. Nose dominated by aromas of small berries (raspberry, redcurrant) very intense with some toasted notes. Tender, fruity and finely spicy on the palate. The tannins on the finish are fine and silky with a very long and persistent finish on the fruit. Serve at 12‐14°C with red grilled meat.
Le Viala, Syrah, Grenache, Carignan
The Viala comes from a small parcel of land at Château Laville Bertrou, situated amongst the exceptional terroirs of the La Livinière appellation (officially recognized since 1998), in other words, a great wine from Languedoc. Gérard Bertrand acquired this uncommon plot of land in 1997 and encouraged the development of strong and powerful wines. This wine benefits from the semi-arid Mediterranean climate; the Viala is exposed to the conditions of the midsouth in the heights of the village la Livinière at around 120m of altitude. The ground is made up of a mosaic of stripped marlstone, associated to chalky limestone, as compact limestone dates back to the Eocene period millions of years ago. This type of ground naturally limits the growth of each grape, but thanks to a long settling period, helping their resistance to the rainfall and aquatic stress. The strong summer sun helps the favoured process of the slow maturing of the grapes. The three grapes assembled for this wine express in a complementary way the hints of this unique terroir that is the Viala.
The harvest is triggered after a very precise monitoring of maturities and a daily grape tasting. The harvest is manual and the grapes are meticulously sorted upon entering the cellar. Syrah and Carignan grapes are put entirely into vats and vinified separately by carbonic maceration. The Grenache are destemmed and vinified with traditional maceration closely controlling the temperatures. After draining vats and the malolactic fermentation of the wine, the different grape varieties are blended and the wine is sung into oak barrels for a 12 months aging. We select the best barrel makers in order to adapt the choice of origins of wood and their types of heating with the potential of each vintage. The wines are neither fined nor filtered before bottling, and the bottles are then stored for 12 months before being sold.
The dress is a beautiful deep garnet. On the nose, the Viala is powerful, revealing notes of ripe fruit and violet. Very beautiful attack, smooth tannins, woody notes, beautiful balance, infinite length... On the palate, this cuvée is very greedy! The Viala has great ageing potential. Best served at18°C, to accompany grilled red meats, game or fine cheeses.
La Forge, Carignan Syrah
The specifically designated parcels of land for this wine come from after the Miocene, situated on the unique and narrow place named “La Forge”, by the land register. This parcel of land is situated on the estate Domaine de Villemajou in the Corbières region, in the Boutenac appellation. The blend of these two grape varieties present in this wine create a beautiful aromatic expression (Syrah) and revelation of the greatness (Carignan). The Domaine de Villemajou is historically the birthplace of Gérard Bertrand's family, and the spearhead of the appellation Boutenac, classed as a premier cru from Corbières known by the INAO (Nation Institute of Appellations of Origin)
The remarkable quality of this wine resides in the exceptional quality of the grapes and the age of the vines: 80 years in Carignan and 20 years in Syrah. The control of the yield (25hl/ha) in trimming the green unripe grapes early, is to ensure that the more mature grapes aren’t malnourished and develop to give a full, concentrated juice. The harvest is manually executed according to tradition. Most of the grapes are put entirely into vats and vinified separately by carbonic maceration. After draining vats and the malolactic fermentation of the wine, the different grape varieties are blended and the wine is sung into new oak barrels for a 12 months aging. This wine is neither pressed nor filtered before being bottled; the bottles are then stored for 12 months before being commercialized.
Dark, ripe cherry-colored, the explosive nose opens with notes of toast, spices and cloves. With great sweetness and very ample, the palate reveals powerful and elegant aromas, reminiscent of jammy red fruits. It is a very great wine with soft tannins and a spicy length. Decant and serve at 18 ° C with a rack of lamb, grilled meats or Mediterranean dishes.
