Theory White Wine – PDO Santorini
Theory White is a distinguished PDO Santorini wine crafted by Venetsanos Winery, showcasing the island’s exceptional volcanic terroir. A blend of 90% Assyrtiko and 10% Aidani, this wine embodies the purity, elegance, and complexity of Santorini’s indigenous grape varieties.
Vineyard & Vinification
- Origin: Sourced from vineyards near Pyrgos village, one of the highest-altitude locations on the island, known for its mineral-rich volcanic soils.
- Grape Composition: Assyrtiko (90%), renowned for its high acidity and structure, complemented by Aidani (10%), which adds floral and aromatic complexity.
- Winemaking Process:
- Extended skin contact enhances texture and aromatic intensity.
- Gentle, slow pressing extracts only the finest free-run juice.
- Fermentation occurs in stainless steel tanks at carefully controlled temperatures of 14-15°C, preserving freshness and varietal character.
- Aging: The wine matures for 8 months in French oak barrels on fine lees, adding depth, richness, and a subtle creamy texture.

Theopetra Estate Rose 2022
July closes with a tasting that the public insistently asked for in view of the August heat.
In our new column TASTED & EVALUATED we tasted the rosé wine of the Theopetra Estate. The captivating blend of the unique Limniona variety and the international Syrah variety comes from PGI Meteora.
Appearance: clear, medium plus intensity, pinkish in colour
Nose: Clean, medium intensity with primary intense fruity aromas of strawberry, blackberry, sweet aromas of blackcurrant jam. Secondary vanilla, caramel. Tertiary hints of spices and light vegetal notes.
Mouth: Dry, crisp acidity, soft tannins. Alcohol moderate plus 13.5%. Primarily intense aromas of fresh red fruits, strawberry, red cherry, secondarily sweet aromas of blackcurrant, blackberry. Tertiary herbal aromas, hints of mint. Medium (+) fruity aftertaste.
Quality: Excellent

Drinkability level: can be consumed now but has the potential to age for 2-3 years.
Pair with pasta with tomato sauce, pastitsio, moussaka, fried prawns, pizza, fruit salads and red fruit desserts such as pavlova. It can be pleasantly eaten on its own as an aperitif.

In the constellation of summer rosés , Part A
The recent "Pink Drink" wine Fair, which was organized with great success by th Vinetum at the Stavros Niarchos Cultural Center, highlighted the richness of the pink version of Greek winemaking. Present, of course, were the heavyweights of the international vineyard, which the TASTED & EVALUATED team will make a special mention of.
That sunny afternoon at the Stavros Niarchos Foundation's Lighthouse, despite the magnificent view of the Saronic Gulf, we focused on the 104 and more rosé wines of the Greek and foreign wine industry.
One wine that piqued our interest was the latest creation of the well-known oenologist Leonidas Nassiakos, from his own newly opened winery "Novus Winery", which is Leonidas' innovative step into the Greek wine scene. This wine is one of four new wines that made their maiden appearance a few months ago.
The motto of the wine is. "In Acquarella 2022 wine, grapes from the mountains in Mantineia and Aegialeia, Peloponesse happily coexist".
Let's discover it:
Varietal composition: Moshofilero, Assyrtiko and Syrah
Appearance: Bright, with pink highlights and pink highlights.
Nose: Medium intensity, clean with primary floral aromas of rose, jasmine and citrus. Secondary grape fruit, peach , pear, red fruit and pink pepper aromas. Tertiarily we detect a light oiliness. Each variety gives its aromatic qualities.
Mouth: Dry, medium plus acidity, medium alcohol 13%, medium + intensity of flavour. Complex, full-bodied, with the oiliness making its presence felt. Wonderful structure, acidity and long aftertaste.
Quality: Excellent
Maturity level for drinking: the wine can be consumed now, but it can be aged.

Tasted & Evaluated the fine Cuvée Emile Signature Sylvaner, Domaine Xavier Muller
Domaine Xavier Muller Signature Cuvée Emile 2020 AOC Alsace Sylvaner
The wine was awarded in Mondial Des Vins Blancs Strasbourg 2023 as the Best white wine with “Le Grand Prix du Jury”.
Let’s meet the “Domaine Xavier Muller”.
The Muller family owns vineyards (2 ha), SINCE 1960 and is a grape seller.
From 1960 to 1980 the farm was mainly a mixed cropping farm, livestock, dairy cows, cereals (wheat, maize) and tobacco.
During this period, the family also bought 3 ha of vines, located in the current Grand Cru Steinklotz.
In 1980 the family ceased the mixed cropping part, apart from cereals (25 ha) and increased the viticulture part following a consolidation on the heights of the hill.
Xavier Léon Muller, whose family descends from millers who settled until the end of the 19th century in the Kronthal valley, acquired the Thomanns Muehle with the support of his father Alphonse Muller and his uncle Xavier Muller.
Nowadays the winemaker Xavier Muller operates more than 25 ha of the vineyard, spread over the entire hill overlooking Marlenheim, from Koenig in the East (a place that transmits the memory of the Merovingians who resided here in the sixth century) to Sand in the West (the only sandstone section), including 10 ha of Grand Cru Steinklotz.
Respecting the Alsatian tradition, the winemaker Xavier Muller presented during the prestigious Mondial Des Vins Blancs Strasbourg the fine white sweet Sylvaner Signature Cuvée Emile 2020.

We tasted in Greece, and we present it to you:
A delicious Sylvaner 100% from clay and limestones soils.
The wine remained in fine lees for about six months in steel barrel.
Tasting notes:
Colour: Pale yellow color
Condition: Clear, medium intense
Sweetness: 68 g/l.
Nose: The nose with primary aromas of apple, pear, lemon and secondary aromas of fresh herbs, fresh hay, undergrowth, mushroom
Body: The palate is unctuous and quickly counter balanced by a freshness a little behind that allows us to appreciate all the finesse of the wine. Alcohol: 12.3% vol
Mineral finish reminiscent of the Clay-Limestone terroir.
Quality: Excellent
Drink: Now and with ageing potential
Operating temperature: 8°-10°C
Capacity: 50 cl
This elegant dessert wine is ideal pairing with: Fresh salads with tropical fruits, apricot tarte, foie gras, smoky cheeses.
